I expect Starlink would work quite well also... But Subaru's advertising seems to indicate they're not concerned. It is not the same as the SpaceX/Starlink LEO satellite Internet service that's just starting public beta testing. However, for the original question, Starlink's latency appears to be much less that 3G phones. So if those worked for you. Starlink likely will too. And I agree, with Starlink's low latency, I wouldn't expect any problems with a relatively low bandwidth protocol like VOIP.
