    Yes, larger-wattage panels are rarely, if ever, 12v

    Because, as mentioned, all the cells are in series. This can be mitigated by buying panels with bypass diodes.

    I have a 48v system. Nice rig, but I can't imagine trying to back that up!

    Any sort of heating takes a lot of power, and the loss due to 'inefficiency' is negligible.
