Newbie needs help prioritizing equipment

Ok, a question for both of you. There are some sensors that state that they are certified for RV use, typically those found from RV sources and costing significantly more. The typical home, battery only operated CO detector is much less costly but it doesn't state that it isn't OK for an RV either. Might it be that they could be impacted by the temperature extremes experienced by a stored RV?

No, you don't need an "RV" only CO monitor.  If replacing, I would go with a digital monitor now (will do that when our current one needs replacing) and put it where it is easy to read in the bedroom area.   BTW - a lot of home CO monitors are wired in depending upon the local ordinances and the builders.  Worried about the monitor in cold storage, just remove to the house (take out batteries) for the winter.

When I was in the boat building business, we installed a CO2 detector at pillow height in every stateroom, and at seating height in the saloon area.  Smoke detectors went on the ceilings along with heat sensors in the galley and engine rooms.  

The CO2 detectors we used were an off the shelf battery operated model.  Not hardwired into the system.  We recommended changing the batteries every season like you do in your home smoke detectors.
